What the daily value on nutrition labels actually means

The daily value on nutrition labels is a reference amount of a nutrient to consume, or not exceed, in one day. The Percent Daily Value (%DV) next to each nutrient shows how much one serving of that food contributes to a full day of eating. So if a can of soup lists sodium at 35% DV, one serving supplies about a third of the sodium reference for the whole day.

Two words matter here. The Daily Value (DV) is the number in milligrams or grams behind the scenes. The %DV is that number translated into a percentage so you can compare foods without doing math. Useful reference points for adults and children age 4 and older include sodium at 2,300 mg, added sugars at 50 g, dietary fiber at 28 g, and saturated fat at 20 g. When a label says 20% DV for fiber, that is roughly 5.6 g in one serving.

The 5/20 rule, the fastest shortcut on the label

The single most useful habit is the 5/20 rule, which the FDA uses in its own guidance:

  • 5% DV or less per serving is considered low for that nutrient.
  • 20% DV or more per serving is considered high for that nutrient.

Low and high are not automatically good and bad. It depends on the nutrient.

For nutrients you generally want more of, such as dietary fiber, vitamin D, calcium, iron, and potassium, high %DV is the win. A cereal at 24% DV fiber is doing real work.

For nutrients most people are told to limit, such as saturated fat, sodium, and added sugars, low %DV is the win. A frozen entree at 45% DV sodium in a single serving is high by the label's own standard, which does not make it forbidden, but it does tell you what the rest of the day should look like.

Anything between 5% and 20% sits in the middle. That is where most everyday foods land, and it is fine.

Serving size is the trap that breaks every comparison

Every %DV on the label refers to one serving, not one package. That is where most shopping mistakes happen.

A bag of tortilla chips may list a serving as 12 chips with 10% DV sodium. If the bag holds five servings and you eat half the bag, you have had about 25% DV sodium from chips alone. Eating two servings doubles both the nutrient grams and the %DV.

A pint of ice cream might list three servings. A bottled iced tea might be listed as two. Neither package is trying to fool you, but the number your eye lands on is per serving.

Before comparing two products, check that the serving sizes are comparable. Two granola brands at 8% DV added sugars are only equivalent if both are measuring the same amount. One might be a 40 g serving and the other 55 g. If they differ, mentally scale the smaller one up before you decide. What has no %DV and why

Not every line on the Nutrition Facts panel gets a percentage.

Total sugars has no %DV, because there is no established reference amount for all sugars combined, including those occurring naturally in milk and fruit. Added sugars does have a Daily Value, currently 50 g, so it does carry a %DV. That is why a plain yogurt can show high total sugars with 0% DV added sugars.

Trans fat has no %DV either. Neither does protein on most conventional food labels, since protein intake is generally adequate in the US diet and the FDA only requires a %DV for protein in specific cases, such as foods for young children or when a protein claim is made.

The absence of a percentage is not a red flag. It just means you read the gram count directly.

Comparing two products in the aisle

Here is how the comparison works in practice with realistic grocery choices.

Bread. Two whole grain loaves, both one slice per serving. Loaf A: 6% DV sodium, 8% DV fiber, 4% DV added sugars. Loaf B: 9% DV sodium, 21% DV fiber, 2% DV added sugars. Loaf B is high in fiber by the 5/20 rule and lower in added sugars, at a modest sodium cost. That is a reasonable trade.

Pasta sauce. Two jars, both a half cup serving. Jar A: 16% DV sodium, 12% DV added sugars. Jar B: 20% DV sodium, 0% DV added sugars. Neither is wrong. If you are watching added sugars, Jar B wins. If sodium is your priority, Jar A does. The label lets you decide instead of guessing from the front of the package.

Cereal. A box advertising whole grain shows 4% DV fiber and 22% DV added sugars per serving. The front says one thing, the %DV column says another. This is exactly the moment the panel earns its keep.

The limits worth knowing

The general Nutrition Facts guide is built on a 2,000-calorie daily diet. Individual calorie and nutrient needs differ by age, sex, activity level, pregnancy, and medical conditions. If you eat 1,500 or 2,800 calories a day, the percentages are still directionally useful for comparing products, but they are not a personal target.

%DV also says nothing about food quality, freshness, satiety, or how a food fits your overall pattern. A food can be low in everything and still not be a meal. Use %DV as a comparison tool, not a verdict.   1. Read the serving size and servings per container first. Decide roughly how much you will actually eat.
  2. Scan the limit nutrients: saturated fat, sodium, added sugars. Look for 5% DV or less where you can get it.
